The Rhode Island Department of Health is an EHS-Net research partner. The EHS-Net program is working on a food research project in FY 2010-2015.
E. coli O157:H7 Rates and Legislation
This project will examine the relationship between E. coli O157:H7 rates and implementation of a state law in 1994 that bars food establishments from serving undercooked ground beef to children under 12 years of age. The project will examine foodborne illness outbreak data from 1996 to 2010 to determine whether:
- E. coli O157:H7 rates are lower in Rhode Island than in other New England states.
- The rate of change in E. coli O157:H7 rates is faster in Rhode Island than in other New England states.
Data from this project will help determine whether regulations prohibiting the sale of undercooked ground beef to children reduce foodborne illness.
